I love cauliflower! Aside from being high in Vitamins C and K, cauliflower has many other health benefits. It is an anticarcinogen, it has anti-inflammatory properties, it helps to aid in digestion and weight loss and helps to detox the body. Cauliflower can be added to almost any veggie dish, but that can get boring. So here is a recipe to spice it up a bit (literally)!

Makes 2 sandwiches

1 head of cauliflower

1/4 cup bbq sauce

1/4 cup hot sauce

1/4 cup siracha sauce

2 tsp garlic powder

1 tbs coconut oil

4 slices ezekiel bread

vegan cheese of your choice 

2 tbs unsweetened almond milk

1/4 cup cucumber

1/4 cup carrot 

1/4 cup broccoli 

handful of mixed greens (per sandwich)

1 avocado 

  1. Preheat oven to 425 degrees. Prepare a pan with parchment paper. 

  2. Cut up cauliflower. Mix sauces, garlic powder, and coconut oil in a large bowl. Add cauliflower and mix until cauliflower is covered by the sauces. Bake for 20 minutes.

  3. Cut up carrots and cucumbers. Combine in a bowl with broccoli. 

  4. In a small sauce pan heat almond milk on low to almost a boil. Add in cheese and stir until cheese begins to melt and mixes with the almond milk.

  5. Mix the cheese sauce with half of the buffalo cauliflower* then add the other veggies.

  6. Toast bread (optional). Put the veggie mixture onto the bread. Smash up half an avocado and add on top of the veggie mixture. Top with a handful of mixed greens and the second slice of bread.

  7. ENJOY! 

*The other half of the buffalo cauliflower can be used to make more sandwiches but I just throw it on top of my salad or eat it on its own!
