I love my greens (maybe that’s just me) and my favorite way to enjoy them is in a salad. But if we’re being honest, not all salads are made equal…I know you know what I mean. No one wants a salad with iceberg lettuce, cucumbers and tomatoes. Is that even a real salad? There is a lot that goes into making a good salad. You need texture, different flavor profiles and a good balance of greens to add-ins and toppings. Well, let me tell you what… I had one of the best salads I have ever had at a restaurant that had a “make-your-own-salad-bar” kind of thing. So of.course I had to come home and recreate it. I switched a few things up a bit but here is the final and delicious recipe.

Here’s what you’ll need…

2 cups massaged tuscan kale (see step one)

1/2 tbs olive oil

2 cups chopped spinach

1/4 cup strawberries, sliced

1/4 cup beets, sliced and halved (about one small beet)

1/4 cup chickpeas

1/8 cup shredded cup

1/8 cup diced red onion

1/4 of an avocado, sliced (or more if you love your avo as much as I do)

1 tbs crushed walnuts

1 tbs pepitas

Strawberry Summer Dressing

This salad is really easy to make. Start by massaging the chopped kale. To do this put it in a large mixing bowl with the olive oil and massage it between your hands for about five minutes. Add the rest of the ingredients and toss. Enjoy!
