This was just meant to be a “plain Jane” like-taco salad, salad to eat while camping but it turned out to be so much more delicious than I expected, so of course I needed to share the recipe!
Ingredients:
Sauce
– 1 cup Coconut vanilla yogurt
– 2 tbls Sriracha sauce
– 1 tsp smoked Paprika
– a pinch of sea salt
Salad
– 1 cup black beans
– 1 cup cooked brown rice (about 1/2 cup uncooked)
– 1/2 cup cooked corn
– 2 cups spinach
– 1/2 cup red cabbage
– 1 small cooked sweet potato (with or without skin)
– 1/2 an avocado
– 1/4 chopped white onion
– 1/4 cup peas (optional)
– handful of sprouts
For the sauce, simple combine all the ingredients and mix it up.
For the salad, simply combine all the ingredients and add some sauce on top (add as much or as little as you would like.) Top it off with the sprouts. Enjoy!
